The basic principle of the Gracie Diet is to keep blood pH levels neutral by consuming only compatible nutrients at each meal. The pH range is from 0 to 14, with 7.0 being neutral. Anything above 7.0 is alkaline, anything below 7.0 is considered acidic. A healthy blood pH has acid + alkaline balance almost equal. A healthy body is slightly alkaline measuring approximately 7.4. The Gracie Diet is flexible but it definitely prohibits consumption of pork and its derivatives and adopts abstinence from alcohol and tobacco.
Realizing that different foods would cause different chemical reactions within the body, Carlos narrowed his focus on food combinations. His idea was to make sure that at each meal, foods consumption would combine to cause healthy chemical reactions. The objective was to prevent blood acidity and avoid fermentation. This would then facilitate the digestive process, which is the most energy-consuming activity of the human body. Although he never had any formal education in the field of nutrition, Carlos studied the works of countless experts from all over the world.
